Bring the mixture to a gentle simmer and continue to simmer for at least 10 minutes, stirring occasionally. Remove the syrup from the heat and strain out the leftover strawberry chunks. - Strawberry Simple Syrup: This is the key ingredient in this virgin mojito. It is easy to make and when made from fresh strawberries, tastes incredibly good. You can use a store bought strawberry simple syrup if you prefer but the taste may be slightly more artificial. Make sure you buy a drink syrup and not a syrup for pancakes.
- Mint Leaves: Every mojito has to have mint. You need fresh mint leaves for this drink, dried mint will not work. If you can find it, mojito mint leaves are the best type to use— they smell exactly like a mojito.
- Lime Juice: Use freshly squeezed lime juice — it makes a differenc! You need about 1 lime per drink.
- 7up: This adds a refreshing amount of fizz. You can use regular or diet versions of 7up or sprite. If you prefer a more neutral taste, you can use club soda instead.
- Strain the drink really well. After shaking the drink in a cocktail shaker, make sure to strain out all of the mocktail into the glass. The ice and muddled mojito leaves can sometimes clog the strainer.
- Use fresh ice. Never use the ice you used in the cocktail shaker to serve your mojito with. This ice is broken and will water down your drink quickly. Always use fresh ice.
