This Kenny’s Cooler Recipe is an easy copycat recipe for the refreshing Texas Roadhouse cocktail. This tropical summer cocktail is made with coconut Malibu rum, lemonade and blue curaçao.

- Lemonade: If you have the time, homemade lemonade will make this cocktail taste especially good. However, a high quality store bought lemonade works just as well and saves a lot of time when you are making a batch of these drinks.
- Peach Schnapps: A dash of peach schnapps gives this drink a subtle hint of peach. As a substitute, you can use Peach Simple Syrup (use only ¼ ounce to ½ ounce of syrup per serving).
- Blue Curaçao: You can use either an alcoholic or non-alcoholic blue curaçao syrup. Blue curaçao gives this drink its classic bright blue color.
- Sweet and Sour Mix: Sweet and sour mix is used in many cocktail recipes. You can sometimes find sweet and sour mix pre-made in the store, but it is easy and much less expensive to make your own at home from lemons, limes, sugar and water (see FAQ section below).
How To Make A Texas Roadhouse Kenny’s Cooler
Step 1: Add the lemonade, Malibu, Peach Schnapps, blue curaçao and sweet and sour mix to a cocktail shaker filled with ice.
Step 2: Shake well and strain into a cocktail glass filled with ice. Add a cherry and orange slice for garnish.
Expert Tips
- Make it a pitcher. This drink works really well as a pitcher drink. Multiply the quantities by 2 to 4 times (depending on the size of your pitcher), and mix everything together in a pitcher. You can either add ice to the pitcher, or chill the pitcher for a couple hours in the fridge before serving.
- Make it a mocktail. For a mocktail version of this drink, leave out the rum and peach schnapps. Instead, use ½ ounce of coconut syrup and ¼ ounce of Peach Simple Syrup. Make sure to use a non-alcoholic blue curaçao. If you find it too sweet or want a bit of fizz, you can top the drink with club soda.
- Make it a slushie. This Kenny’s Cooler tastes really good as a frozen drink! Blend the ingredients together with a handful of ice until you have a slushie consistency. Even better, if you have time, freeze the lemonade into ice cubes and use those to blend the drink with instead of water.

Once the simple syrup cools down, combine ¼ cup simple syrup with ¼ cup freshly squeezed lemon juice and ¼ cup freshly squeezed lime juice. Mix well and store leftovers in the fridge or freezer.
This recipe makes one drink. However, it is 9 ounces of liquid — which is a lot more than typical cocktail recipes. You can easily make one serving and divide it between two people.
