Description

This Kenny’s Cooler Recipe is an easy copycat recipe for the refreshing Texas Roadhouse cocktail. This tropical summer cocktail is made with coconut Malibu rum, lemonade and blue curaçao.

  1. Add the lemonade, Malibu rum, Peach Schnapps, blue curaçao, and sweet and sour mix to a cocktail shaker filled with ice.
  2. Shake well and strain into a fishbowl glass filled with ice. Optionally, add a maraschino cherry and orange slice as garnish. Serve immediately.

Notes

  • How to make your own sweet and sour mix: Heat ¼ cup granulated sugar and ¼ cup water together in a saucepan over medium heat, stirring occasionally until the sugar fully dissolves. Let the syrup cool. Mix the syrup with ¼ cup freshly squeezed lemon juice and ¼ cup freshly squeezed lime juice.
