  • Rolled Oats: Rolled oats are the base of this overnight oats recipe. Steel cut oats, quick oats or instant oats do not work as a substitute because they don’t absorb milk in the same way and can end up too mushy.
  • Apple: Use a sweet variety of apple, such as a honeycrisp or a pink lady.
  • Brown Sugar: Brown sugar adds sweetness and a rich, caramel flavor.
  • Maple Syrup: Use pure maple syrup rather than artificial syrup as this will give a much more authentic flavor.
  • Fall Spices: A combination of cinnamon, ginger, nutmeg and cloves are infused into the oats to really make them taste like apple pie.
  • Salt: A pinch of salt helps to bring out the other flavors.

Optional Add-Ins

These apple pie overnight oats are so good as is. However, there are also a lot of ways to customize overnight oats by adding in extra ingredients. Here are some ideas for things to add to these oats:

  • Fresh Fruit: bananas, strawberries, blueberries or raspberries
  • Nuts & Seeds: almond, walnuts, sunflower seeds, hemp hearts, chia seeds
  • Granola: maple granola or apple granola
  • Chocolate: chocolate chips or a drizzle of chocolate sauce

Equipment

  • A small saucepan to make the apple-infused syrup in.
  • A couple mason jars to prep and store the overnight oats in.

Instructions

Step 1: In a small saucepan, melt the butter over medium heat. Add the apple chunks, brown sugar, maple syrup, and spices. Bring the mixture to a gentle simmer, put a lid on the saucepan and reduce the heat to low. Continue to simmer for 4 to 5 minutes until the apples are tender.

Step 2: Remove the apples from the stove and let them cool to room temperature. Separate out a few apples to use to top the finished overnight oats.

Step 3: In a medium sized bowl, mix the rolled oats and almond milk together. Stir in the cooked apples along with the extra liquid.

Step 4: Divide the overnight oats into two containers and top with the reserved apples. Put the oats in the fridge to set overnight.

Make Ahead

These apple pie oats are a great recipe to meal prep in advance. You can make a large batch on the weekend for the week ahead. 

Store the overnight oats in airtight containers in the fridge until you are ready to eat them. 

These overnight oats will technically be good for up to about 5 to 6 days in the fridge. However, they will taste freshest when consumed within the first 3 to 4 days.

Expert Tips

  • When making the apple pie syrup, keep the lid on the saucepan when the mixture is simmering. Simmering with the lid off will cause too much water to evaporate, leaving a thick, sticky syrup.
  • Sometimes these oats may dry up slightly after a few days in the fridge. If needed, add a splash of almond milk before serving them.
  • If you are in a rush and can’t make this recipe a night in advance, you can get away with letting these oats set for 2 to 4 hours in the fridge. They may be slightly more liquid, but will still taste delicious.

What are the best containers to use for overnight oats?

Any airtight tupperware or mason jar will work.

Do you eat overnight oats hot or cold?

They are tasty either way! You can either eat them straight out of the fridge, or heat them up in the microwave for 20 to 30 seconds.

Do you have to peel the apples?

No. Unless you really don’t like the peel on apples, it is much faster and not necessary to peel the apples for this recipe.

  • 2 ½ tbsp brown sugar
  • 1 ½ tbsp maple syrup
  • 1 ½  teaspoon cinnamon
  • ⅛ tsp ground ginger
  • ⅛ tsp ground nutmeg
  • ⅛ tsp ground cloves
  • ⅛ tsp salt
  • 1 cup rolled oats
  • ⅔ cup almond milk
