Recipe Highlights
- They’re easy to make. Even though they look fancy, these chocolate covered strawberries are really easy and quick to make.
- There are lots of ways to decorate them. The purple color gives these strawberries a unique look. You can leave them as is or decorate them with other colors or topping such as pistachios or almonds.
- They are inexpensive. Premade chocolate covered strawberries can be fairly expensive, but making them at home saves a lot of money.
Ingredients & Substitutions
- Strawberries: Use fresh, juicy strawberries that are ripe and ready to be eaten. Frozen strawberries or strawberries that are soft and mushy won’t work well for this recipe. Use frozen or slightly mushy strawberries to make this strawberry apple crisp or this strawberry simple syrup instead.
- White Melting Chocolate: White chocolate melting wafers are melted down to create the chocolate coating for these strawberries. White chocolate bars or white chocolate chips won’t melt as smoothly.
- Red and Blue Food Coloring: A combination of red and blue food coloring is used to turn the white chocolate purple.
Equipment
- A microwave safe bowl to melt the chocolate.
- A baking tray to lay out the finished strawberries on.
- Parchment paper to line the baking tray.
Instructions
Step 1: Melt the white chocolate wafers in the microwave. Heat in 20 second increments and mix in between until smooth. Add 5 drops of red food coloring and 1 to 2 drops of blue food coloring. Stir to form a smooth purple color.
Step 2: One at a time, dip each strawberry into the melted purple chocolate, coating the red part of the berry.
Step 3: Place each strawberry on a baking tray lined with parchment paper.
Step 4: If desired, sprinkle the strawberries with optional toppings before the chocolate has fully set. Put the tray in the fridge for at least 10 to 15 minutes before serving to let the chocolate fully set.
Make Ahead & Storage
You can make these purple chocolate strawberries a couple days ahead of time.
They will last for up to 5 days in the fridge in an airtight container. However, they will taste best when served within 2 days of assembly.
These strawberries will not freeze well.
Expert Tips
- Heat in 15 to 20 second intervals. It is important to check your chocolate every 15 to 20 seconds when melting the chocolate in the microwave. If the wafers are heated too much, the chocolate will begin to harden. If this happens, you will have to start again.
- Start with a small batch. If this is your first time making these, start with enough chocolate to make just a few strawberries (5-6). It can be easier to work in smaller quantities and you won’t waste as much chocolate if you make a mistake.
- Use a double boiler. If you can’t get the hang of melting the chocolate in the microwave without it overheating and clumping up, try using a double boiler on the stovetop instead.
- Dry the strawberries. Make sure the strawberries are fully dried before dipping them into the chocolate. Water mixed into the chocolate can cause it to clump up.
- Work quickly. Once the chocolate is melted, work quickly to dip all the strawberries before the chocolate hardens.
- Adjust the color. The purple color will vary slightly depending on how large the drops of food coloring that you add are. Add an extra drop of red or blue food coloring to get the shade of purple that you are looking for.
Toppings & Decorations
There are lots of ways to decorate these strawberries. Toppings can add extra crunch and flavor or be decorated for a special occasion such as a birthday, anniversary or for Mother’s Day. Here are some ideas for optional toppings and decorations:
- Colored Chocolate: Use other colors of melted chocolate to drizzle over the purple chocolate coating. White chocolate, yellow, blue or pink colors would all go well with purple.
- Edible Glitter: Edible glitter or edible gold flakes can add an extra decorative element to your chocolate strawberries.
- Nuts: Chopped nuts such as pecans, walnuts, almonds or pistachios add both crunch and flavor to your strawberries.
- Chocolate Shavings: Add chocolate shavings or curls for an extra chocolate taste.
- Sprinkles: Use sprinkles depending on the occasion — such as multicolored sprinkles, chocolate sprinkles, birthday sprinkles, Christmas sprinkles or Easter sprinkles.
- Oreo Crumbs: Crush a couple oreo cookies and gently press the crumbs into the purple chocolate coating.
FAQ
Yes, if you can find purple chocolate melting wafers, you can use those instead of white ones with food coloring. However these tend to be more expensive than white ones and you don’t have as much control over the shade of purple.
If the chocolate is overheated, it will actually seize up and harden in a clump. If this happens, you will unfortunately have to start over. Make sure to microwave the chocolate in short increments, stirring in between. Stop once the chocolate is melted and smooth.
No. White chocolate chips and white chocolate bars won’t melt as smoothly as white melting chocolate wafers.
