This strawberry apple crisp recipe is a simple and tasty weeknight dessert. Made with an apple and strawberry fruit base, with a crispy brown sugar, oat, pecan and walnut topping. Serve fresh out of the oven with a scoop of vanilla ice cream.

All of the ingredients that are needed to make the strawberry apple crisp.
  • Strawberries: Fresh strawberries are great for this recipe when they are in season. You can use frozen strawberries, but don’t thaw them first.
  • Apples: Really any type of apple will work, but some types are better than others for baking. For this crisp recipe, use Granny Smith, Honeycrisp or Fuji apples.
  • Lemon juice: Lemon juice brings out the flavors of the fruit and prevents the apples from browning.
  • Vanilla extract: Just a tiny dash for a little bit of vanilla flavor.
  • Sugar: Granulated sugar is used to mix with the fruit. Brown sugar is used to make the crispy oat and nut topping.
  • Flour: Flour helps absorb some of the juices in the fruit base so it is not too liquidy.
  • Spices: Cinnamon, cloves, nutmeg and salt add lots of cozy flavor and go really well with the apples.
  • Rolled oats: These are used to make the apple crisp topping.

Instructions

Step 1: Peel, core and cut the apples into bite sized chunks and slice the strawberries. Mix in the lemon juice and vanilla extract.

Step 2: Mix the granulated sugar and flour with the apples and strawberries until they are evenly coated.

Step 3: In a separate bowl, mix the butter, sugar and spices together. Then add in the rolled oats and nuts, mixing until evenly combined.

Step 4: Add the fruit to the bottom of a greased 8 x 8 baking dish.

Step 5: Spread the oats and nuts mixture evenly on top of the fruit layer.

Step 6: Bake for 350F for 35 to 40 minutes until the top is golden brown and crispy.

Variations

  • Add in pears. This recipe works well with pears as well. Just make sure to use the same quantities of fruit. Try substituting some or all of the apples for pears.

Storage & Reheating

  • Storage: Store leftovers in an airtight container in the fridge for up to 5 days.
  • Reheating: Reheat leftovers in the microwave for 30 seconds to 1 minute, using a microwave safe dish. You can also reheat leftovers in the oven at 350F for 10 to 15 minutes, or heat in a mini oven until warm.

  • Serve with ice cream. This strawberry apple crisp is delicious on its own, but goes even better with ice cream. Try vanilla, butter pecan or maple walnut flavors.
  • Bake in individual ramekins. If you are serving guests, you may want to bake this crisp recipe in individual ramekins for presentation. The number of ramekins this recipe fills will depend on the size of the ramekins you use.

Description

This strawberry apple crisp recipe is a simple and tasty weeknight dessert.


Ingredients

  • Filling:
    • 2 medium apples, peeled and chopped
    • 2 cups strawberries, sliced
    • 2 tbsp lemon juice, freshly squeezed
    • ½ tsp vanilla extract
    • ⅓ cup granulated sugar (67g)
    • ⅓ cup all purpose flour (40g)
  • Topping:
    • ½ cup + 1 tablespoon brown sugar, packed (112g)
    • ¼ cup butter, melted (56g)
    • 1 tsp cinnamon
    • ¼ tsp ground cloves
    • ¼ tsp nutmeg
    • ⅛ tsp salt
    • ¾ cup rolled oats (67g)
    • ½ cup walnuts, chopped (56g)
    • ½ cup pecans, chopped (56g)

Instructions

  1. Preheat the oven to 350F. Butter an 8 x 8 baking dish and set aside.
  2. In a large bowl, mix together the apples, strawberries, lemon juice and vanilla extract. Mix to coat the fruit in the lemon juice.
  3. Add in the sugar and flour and mix to coat the fruit evenly.
  4. In a separate large bowl, mix the brown sugar, butter, cinnamon, cloves, nutmeg and salt together until evenly combined. Then, mix in the rolled oats, walnuts and pecans.
  5. Spread the apple and strawberry mixture evenly across the bottom of the 8 x 8 baking dish. Layer the brown sugar and oat mixture evenly on top.
  6. Bake for 35 to 40 minutes until bubbly and golden brown. Remove from the oven and let cool for 5 to 10 minutes. Serve with ice cream (optional)
