This refreshing pineapple gin cocktail (pineapple gin and tonic) is an easy summer cocktail to make in just a few minutes with only 4 ingredients. It’s a great drink for the hot summer weather and is perfect to make for guests when entertaining.

  • Tonic Water: Tonic water has a distinct flavor, and makes this drink the best pineapple gin tonic cocktail. If you don’t like tonic water, you can use club soda instead, which has more of a neutral flavor.

Step 1: Add the pineapple juice, gin and lime juice to a cocktail shaker. Shake well and strain.

  • Chill the cocktail glasses. To keep this cocktail extra cold while you are sipping it on a hot day, chill the cocktail glasses in the freezer for 30 minutes before serving. 
  • Serve it in a pitcher. If you are serving a large group of guests, triple the quantity of ingredients and mix everything together in a large pitcher, rather than using a cocktail shaker. 
  • Make it a mocktail. This pineapple juice cocktail makes a great mocktail! Just leave out the gin for a non-alcoholic variation. 
  • Add some garnish. Some garnish ideas include fresh pineapple chunks, lime wheels or colorful, edible flowers.

  • Ginger Pineapple Gin Cocktail: Pineapple and ginger pair very well together. For a pineapple kick to this drink, add in some honey ginger syrup, or replace the tonic water with ginger beer. 
  • Herby Pineapple Gin Cocktail: For a more complex flavor profile, add in some fresh herb flavor by using an herb simple syrup, such as this thyme simple syrup, this rosemary simple syrup or this basil simple syrup. You can also muddle fresh herbs in the bottom of the cocktail shaker. 
  • Coconut Pineapple Gin Cocktail: For a coconut variation, replace ½ oz of gin with Malibu rum. Replace 1 oz of tonic water with 1 oz of coconut water.

How do you make fresh pineapple juice?

If you want to make fresh pineapple juice for this cocktail, the easiest way is to use a juicer. If you don’t have a juicer, you can blend fresh pineapple chunks with water and then pass the mixture through a fine mesh strainer to remove the pulp.

Can I make this pineapple juice and gin drink in advance?

This cocktail is best served fresh. However, you can mix the pineapple juice, gin and lime juice together and store them in the fridge for a few hours before serving. Only add the tonic water when you are ready to serve the drink, otherwise it will become flat.

Description

Ingredients

  • 3 oz pineapple juice*
  • 1 ½ oz gin
  • ½ oz lime juice, freshly squeezed
  • 2 oz tonic water

Instructions

  1. Add the pineapple juice, gin and lime juice to a cocktail shaker filled with ice. Shake well for 20 seconds until the outside is frosted. 
  2. Strain into a cocktail glass filled with ice. Top with tonic water and serve immediately.

  • *You can use storebought pineapple juice or make your own fresh pineapple juice using a high quality juicer. 
  • Variations: Replace the tonic water with ginger beer for a ginger kick. Or, add in some rosemary simple syrup or thyme simple syrup for some fresh herb flavor.
