Description
This refreshing pineapple gin cocktail (pineapple gin and tonic) is an easy summer cocktail to make in just a few minutes with only 4 ingredients. It’s a great drink for the hot summer weather and is perfect to make for guests when entertaining.
Ingredients

- 3 oz pineapple juice*
- 1 ½ oz gin
- ½ oz lime juice, freshly squeezed
- 2 oz tonic water
Instructions
- Add the pineapple juice, gin and lime juice to a cocktail shaker filled with ice. Shake well for 20 seconds until the outside is frosted.
- Strain into a cocktail glass filled with ice. Top with tonic water and serve immediately.
Notes
- *You can use storebought pineapple juice or make your own fresh pineapple juice using a high quality juicer.
- Variations: Replace the tonic water with ginger beer for a ginger kick. Or, add in some rosemary simple syrup or thyme simple syrup for some fresh herb flavor.
