Ingredients & Substitutions
- Blueberries: If it is blueberry season, use fresh blueberries. You can use frozen blueberries as well. Let the blueberries partially thaw before making the syrup.
- Mint: Use fresh mint leaves only. Dried mint won’t work for this recipe. For the most authentic mojito flavor, use mojito mint leaves if you can find them.
- Lime Juice: Use freshly squeezed lime juice, rather than bottled lime juice for the freshest taste.
- Club Soda: Use club soda or sparkling water for a bit of fizz. You can also use Sprite or 7Up, but both of these will add a slightly stronger lime flavor.
- Sugar: For this simple syrup, granulated sugar works best.
- Water: Water is used to make the blueberry syrup. Use filtered water to avoid any unpleasant tastes from tap water.
Step By Step Instructions
Step 1: Heat the blueberries, sugar and water together on a saucepan over medium heat. Stir and smash the blueberries as the syrup heats up. Continue to stir for 5 to 8 minutes until the sugar has completely dissolved. Strain out the blueberry chunks and let the syrup cool.
Step 2: Muddle the blueberry syrup, mint leaves and lime juice together.
Step 3: Top with club soda. Gently stir and serve.
What To Do With Leftover Blueberry Syrup
It is hard to make blueberry simple syrup in very small quantities. So you will be left with extra simple syrup after making these mojito mocktails.
Storage: Allow leftover syrup to completely cool to room temperature. Then store it in an airtight container in the fridge for up to 1 to 2 weeks.

Expert Tips
- Don’t boil the syrup. Boiling the blueberry syrup can cause too much water to evaporate, making the simple syrup too thick. The blueberry simple syrup should have the consistency of water.
- Muddle the mint gently. Use a muddler to press gently on the mint leaves. Overmuddling or tearing the mint leaves can cause the mint leaves to release a bitter flavor.
- Add in another flavor. If you are looking to make a tropical fruity mixed flavor mojito, experiment with other flavors. Try adding in a splash of pineapple or mango juice for example.
