Description
This blueberry mojito mocktail is a refreshing, summer drink. It’s made with homemade blueberry syrup from real blueberries for the most powerful blueberry flavor!
Ingredients

- Blueberry Simple Syrup:
- ¼ cup blueberries
- ¼ cup granulated sugar
- ¼ cup water
- Blueberry Mojito Mocktail:
- 8 large mint leaves
- 1 oz blueberry simple syrup
- 1 oz lime juice, freshly squeezed
- 4 oz club soda
Instructions
Blueberry Simple Syrup:
- Heat the blueberries, granulated sugar and water in a small saucepan over medium heat, stirring occasionally.
- As the syrup heats up, press on the blueberries to smash them, releasing their juices.
- Continue to heat the syrup for 5 to 8 minutes until the sugar has completely dissolved. Don’t let the syrup boil.
- Once the sugar has dissolved, remove the syrup from the heat and strain out the blueberry chunks. Let the syrup cool to room temperature before continuing.
Blueberry Mojito Mocktail:
- In a highball cocktail glass, muddle mint leaves, blueberry simple syrup and lime juice together. Press the leaves gently to release the mint flavor.
- Add in a handful of ice and top with club soda. Stir gently before serving.
Notes
