The ingredients needed to make the pineapple whiskey sour.
  • Pineapple Juice: Use a high quality, pulp free pineapple juice. If you can’t find pure pineapple juice, you can use a blended tropical juice that is a combination of citrus flavors. 
  • Whiskey: Use whatever type of whiskey-bourbon you prefer. Generally mid-shelf whiskeys are best for mixing into cocktails (save the high end whiskey for drinking on the rocks). 
  • Lemon Juice: Use freshly squeezed lemon juice for the best flavor. Avoid using bottled lemon juice if possible. 
  • Aquafaba: This recipe uses aquafaba (the liquid on top of a can of chickpeas), to make the foam that sits on top of the cocktail. You can replace this with an egg white, or you can leave it out entirely.

How To Make A Pineapple Whiskey Sour

Step 1: Add the pineapple juice, whiskey, lemon juice and aquafaba to a cocktail shaker filled with ice.

Step 2: Shake for 20 to 30 seconds until the outside of the shaker is frosted. Strain into a cocktail glass.

Expert Tips

  • Chill your cocktail glasses. Since this drink is not served over ice, chilling the cocktail glasses in advance can help keep the drink cold for longer. 
  • Shake the aquafaba separately. Sometimes after vigorously shaking the cocktail, the aquafaba can get stuck inside the shaker. If this happens, you may find gently shaking aquafaba separately and pouring it on top of the whiskey sour helps create a better foam layer. 
  • Use fresh pineapple juice. If you have the time, use a juicer to make fresh pineapple juice for this cocktail — it doesn’t compare to using a store bought juice!
  • Use pineapple whiskey. This is the perfect cocktail to use pineapple whiskey if you have it. If you are using pineapple whiskey, you can reduce the amount of pineapple juice you add so it doesn’t overpower the drink.
  • Make it stronger. You can reduce the amount of pineapple juice to make a stronger tasting whiskey sour. Use 2 ounces instead of 4 ounces for a stronger whiskey sour.

Recipe FAQs

Can I use an egg white instead of aquafaba?

Yes! If you don’t mind using egg whites in cocktails, you can replace the aquafaba with one egg white.

What is aquafaba?

Aquafaba is the liquid in a can of chickpeas and is often used as a vegan/non-dairy alternative to egg whites in cocktails. When shaken, it creates a similar foam as an egg white would.

Can I leave out the aquafaba?

Yes. The aquafaba isn’t necessary for this recipe as it doesn’t contribute to the taste (it is really just for the foam on top of the whiskey sour).

  • 1 oz lemon juice, freshly squeezed
  • 1 oz aquafaba*

Instructions

  1. Add the pineapple juice, whiskey, lemon juice and aquafaba to a cocktail shaker filled with ice.
  2. Shake well for 20 seconds and strain into a cocktail glass. Serve immediately.
