How To Make Fresh Pomegranate Juice
If it is pomegranate season, and you are looking for a way to use up extra pomegranate arils, making fresh pomegranate juice for this cocktail is a great option.
There are several methods for making pomegranate juice, depending on the time you have and the equipment you have available.
The first step is to cut the pomegranate and remove all the pomegranate arils. Then choose one of the following methods:
- Juicer: If you have a juicer, this is the quickest and easiest method for making pomegranate juice. Pass the pomegranate arils through the juicer. The juicer will remove all the seeds and leave the smoothest juice.
- Blender: Blend the pomegranate arils in a high quality blender. Don’t over-blend. You don’t want to blend the seeds, but just extract the juice. Once the juices have been released, pass the mixture through a fine mesh sieve to remove any seeds.
- By Hand: This method involves the most elbow grease, but it works if you don’t have a juicer or blender. Use a fork to mash the pomegranate arils until they release their juices. Then, pass the mixture through a fine mesh strainer to remove the seeds.

To make your own simple syrup, heat equal portions of water and granulated sugar (ie. 1 cup water with 1 cup granulated sugar) in a saucepan over medium heat. Continue to heat, stirring occasionally until the sugar has fully melted. Remove from the stove and let cool to room temperature. Store in an airtight container in the fridge for up to 2 weeks.
If you are juicing your own pomegranates, keep in mind that one pomegranate will give you about ½ cup of juice. This is just a bit more than what you will need for one cocktail.
If I am not using freshly squeezed pomegranate juice, I use POM pomegranate juice to make this cocktail. However, you can use any high quality pomegranate juice. Try to avoid brands that are overly sugary.
