This lychee mocktail, made with a honey ginger syrup is a unique and refreshing mocktail recipe that both kids and adults will love. This is the perfect non-alcoholic drink to sip on by the pool.

  • Fruity & Floral — Lychee has a unique flavor that adds a floral twist to any drink. This mocktail has just the right balance of flavors. 
  • Not too sweet — Unlike some mocktails, this one doesn’t taste like you are drinking pure juice. It has a complex blend of flavors without being overly sweet. 
  • Honey ginger syrup — The homemade honey ginger syrup is what really makes this mocktail one of a kind. The honey and ginger combine perfectly with the lychee for an impressive drink.

Ingredients & Substitutions

The ingredients needed to make the lychee mocktail.
  • Lychee Nectar: Not all grocery stores will carry lychee nectar or juice. If you can’t find it, try your local asian supermarket, or order some online.
  • Lime Juice: A bit of lime juice gives this mocktail a zingy kick. You can use bottled lime juice, but if you have the option, fresh lime juice will always taste best.
  • Honey: Honey is used to make the simple syrup. It adds sweetness and flavor to the mocktail. It is ok if the honey is older and has hardened in the bottle, it will loosen up while making the syrup. As a substitute, use maple syrup. 
  • Ginger: This recipe only works with fresh ginger. Ground ginger will not give the same, strong ginger flavor. 
  • Water: Water is used to give the honey ginger syrup the right consistency. 
  • Club Soda: Use club soda or sparkling water for a bit of fizz. For an extra ginger kick, you can substitute this with ginger beer instead.

How To Make A Lychee Mocktail

Step 1: Heat the ginger, honey and water together on a saucepan to make the syrup.

Step 3: Add the lychee nectar, honey ginger syrup and lime juice to a cocktail shaker filled with ice. Shake and strain. Top with the club soda.

Expert Tips

  • Dice the ginger finely. When making the simple syrup, the more finely diced the ginger is, the more flavor it will infuse into the syrup. 
  • Store leftover syrup in the fridge. Allow leftover syrup to cool to room temperature before storing it in an airtight container in the fridge for up to 1 to 2 weeks. 
  • Substitute the simple syrup. To try other flavors, replace the honey ginger syrup with another syrup that pairs well will lychee, such as this thyme simple syrup or this raspberry simple syrup.

Recipe FAQs

Can I use fresh lychees for this mocktail recipe?

Yes. If you prefer, you can blend fresh lychees and pass them through a fine mesh strainer to make a lychee purée. The drink will be slightly thicker and you may need to add a bit more syrup to get the right amount of sweetness.

What can I do with leftover honey ginger syrup?

Use leftover honey ginger syrup to mix with flavored iced tea or lemonade, or to create other cocktail recipes.

Description

This lychee mocktail, made with a honey ginger syrup is a unique and refreshing mocktail recipe that both kids and adults will love. This is the perfect non-alcoholic drink to sip on by the pool.


Ingredients

Scale
  • Honey Ginger Syrup:
    • ¼ cup ginger, diced
    • ¼ cup honey
    • ¼ cup water
  • Lychee Mocktail:
    • 3 oz lychee nectar
    • 1 oz honey ginger syrup
    • ¾ oz lime juice, freshly squeezed
    • 3 oz club soda

Instructions

  1. First, make the honey ginger syrup: Heat the ginger, honey and water together in a saucepan over medium heat. Stir occasionally until the honey dissolves. Don’t let the syrup boil. Continue to heat for 5 to 8 minutes.
  2. Remove the syrup from the stove and use a fine mesh strainer to strain out the ginger chunks. Let the syrup cool to room temperature.
  3. Next, make the lychee mocktail: Add the lychee nectar, honey ginger syrup, lime juice and a handful of ice to a cocktail shaker. Shake well for 20 seconds. Strain and pour into a cocktail glass filled with ice.
  4. Top with club soda, gently stir and serve.

Notes

  • If you want to use fresh lychees, blend the lychees until smooth and then pass them through a fine mesh strainer. Adjust the amount of syrup added to taste.
