Description
This lychee mocktail, made with a honey ginger syrup is a unique and refreshing mocktail recipe that both kids and adults will love. This is the perfect non-alcoholic drink to sip on by the pool.

- Honey Ginger Syrup:
- ¼ cup ginger, diced
- ¼ cup honey
- ¼ cup water
- Lychee Mocktail:
- 3 oz lychee nectar
- 1 oz honey ginger syrup
- 3/4 oz lime juice, freshly squeezed
- 3 oz club soda
Instructions
- First, make the honey ginger syrup: Heat the ginger, honey and water together in a saucepan over medium heat. Stir occasionally until the honey dissolves. Don’t let the syrup boil. Continue to heat for 5 to 8 minutes.
- Remove the syrup from the stove and use a fine mesh strainer to strain out the ginger chunks. Let the syrup cool to room temperature.
- Next, make the lychee mocktail: Add the lychee nectar, honey ginger syrup, lime juice and a handful of ice to a cocktail shaker. Shake well for 20 seconds. Strain and pour into a cocktail glass filled with ice.
- Top with club soda, gently stir and serve.
Notes
- If you want to use fresh lychees, blend the lychees until smooth and then pass them through a fine mesh strainer. Adjust the amount of syrup added to taste.
