Ingredients
Scale
- Strawberry Simple Syrup:
- 1 cup strawberries
- ½ cup sugar
- ½ cup water
- Strawberry Gimlet:
- 3 oz strawberry simple syrup
- 2 oz gin
- 2 oz lime juice, freshly squeezed
Instructions
- Make the strawberry syrup: Heat the strawberries, sugar and water in a saucepan over medium heat. Stir occasionally to dissolve the sugar. Bring the mixture to a gentle simmer, but don’t let the syrup fully boil. Use a fork to mash the strawberries to release the juice. Let the syrup simmer for 10 minutes to allow the flavor to fully infuse. Remove the saucepan from the stove and strain out the strawberry chunks. Let the syrup cool for a few minutes before using in the cocktails.
- Make the strawberry gimlet: Add the strawberry simple syrup, gin and lime juice to a cocktail shaker with ice. Shake well for 5 to 7 seconds until the outside is frosted. Strain and serve into a cocktail glass filled with fresh ice (optional). Enjoy responsibly!
Notes
- Storing the syrup: Store any leftover strawberry syrup in an airtight container in the fridge for up to a couple weeks.
