- Peach Simple Syrup:
- 1 cup peaches, slices
- ½ cup granulated sugar
- ½ cup water
- Peach Margarita On The Rocks:
- 1 ½ oz peach simple syrup
- 1 ½ oz tequila
- ½ oz lime juice, freshly squeezed
- ½ tbsp Cointreau
- Salt to rim the margarita glass
Instructions
- First, make the peach simple syrup. Heat the peaches, sugar and water together in a saucepan over medium heat. Stir occasionally and use a fork to break down the peach chunks as they warm up. Don’t let the syrup boil.
- Once the sugar has completely dissolved, remove the saucepan from the stove and strain out the peach chunks. Let the syrup cool to room temperature before making the margarita.
- Then, make the peach margarita on the rocks. Run a wedge of lime around the edge of the margarita glass and roll it in salt, pressing to make the salt stick.
- Add the peach simple syrup, tequila, lime juice and Cointreau to a cocktail shaker filled with ice. Shake well for 20 seconds until the outside is frosted. Strain into the prepared margarita glass and serve.
Notes
- This recipe will make extra peach simple syrup. Store leftovers in an airtight container in the fridge for up to 1 to 2 weeks.
