Description
This creamy, rich coconut milk latte is healthy, dairy free and completely vegan.
Ingredients

- 1 ½ oz espresso
- 2 ½ tsp maple syrup
- ¼ tsp cinnamon
- ¼ tsp vanilla extract
- ½ cup coconut milk
Instructions
- While still hot, mix the maple syrup, cinnamon and vanilla extract into the espresso until fully dissolved.
- In a tall, microwaveable glass, use a handheld electric frother to froth the coconut milk for 30 seconds until it doubles in volume. Microwave the coconut milk for 20-30 seconds until warm.
- Pour the frothed coconut milk over the espresso. Scoop the remaining frothed foam on top. Optionally, sprinkle with cinnamon. Enjoy!
Notes
- Froth the coconut milk when cold. Coconut milk, like almond milk, froths best when it is cold. Keep it in the fridge until you are ready to froth it.
- How to store extra coconut milk: If you are opening a new can of coconut milk to make this recipe, store the leftovers in an airtight container in the fridge for up to 5 days.
