Description
These refreshing blueberry mojitos are the perfect rum cocktail for a warm summer night. They have the same mint, lime and white rum base as a regular mojito, but add in a fruity blueberry twist.
Ingredients
Scale
- Blueberry Simple Syrup:
- 1 cup blueberries
- ½ cup granulated sugar
- ½ cup water
- Blueberry Mojitos:
- 8 medium mint leaves
- 2 oz blueberry simple syrup
- 1 oz lime juice, freshly squeezed
- 1 ½ oz white rum
- 7 oz club soda
Instructions
Blueberry Simple Syrup:
- Heat the blueberries, granulated sugar and water in a saucepan over medium heat. Continue to heat, stirring occasionally. As the blueberries warm, press on them with the back of a spoon to burst them.
- Continue stirring for about 5 to 8 minutes until the sugar has completely dissolved. Don’t let the syrup boil.
- Remove the syrup from the stove and strain out the blueberry chunks. Let the syrup cool to room temperature.
Blueberry Mojitos:
- In the bottom of a highball glass, muddle the mint leaves, blueberry syrup and lime juice together.
- Add in a handful of ice and rum. Stir.
- Top off with club soda. Stir again gently before serving.
Notes
- Store leftover blueberry syrup in an airtight container in the fridge for up to 1 to 2 weeks.
