This fruity raspberry moscow mule is a refreshing summer cocktail that is easy to make.

- Raspberry Simple Syrup:
- ½ cup raspberries
- ½ cup (100g) granulated sugar
- ½ cup water
- Raspberry Moscow Mule:
- 1 ½ oz raspberry simple syrup
- 1 oz vodka
- 1 oz lime juice
- 4 oz ginger beer
Instructions
- Make the raspberry simple syrup. Heat the raspberries, sugar and water in a saucepan over medium to high heat. Stir occasionally. Use a fork to break down the raspberries, releasing their juices.
- Continue to heat the syrup for another 5 to 7 minutes until the sugar has completely dissolved.
- Once dissolved, remove the syrup from the stove and pass it through a fine mesh sieve to remove the raspberry chunks. Let it cool to room temperature.
- Make the raspberry moscow mule. Add the raspberry simple syrup, vodka and lime juice to a copper mule mug filled with ice. Stir.
- Top off with the ginger beer and serve. Enjoy responsibly!

- Storage: Store leftover raspberry syrup in an airtight glass container in the fridge for up to 2 to 3 weeks.
