This fruity raspberry moscow mule is a refreshing summer cocktail that is easy to make.

- Raspberry Simple Syrup:
- ½ cup raspberries
- 6 tbsp granulated sugar (75g)
- ½ cup water
- Raspberry Moscow Mule:
- 3 tbsp raspberry simple syrup
- 1 oz vodka
- 1 oz lime juice
- 4 oz ginger beer
Instructions
- First, make the raspberry simple syrup. On a saucepan over medium to high heat, bring the raspberries, sugar and water to a very gentle simmer, stirring occasionally.
- Continue to gently simmer the syrup for another 5 to 10 minutes as the raspberries break down and the sugar fully dissolves. Use a fork to gently mash the raspberries, encouraging them to release their juices.
- Remove the syrup from the stove and pass it through a fine mesh sieve to separate the raspberry pieces. Let the syrup cool for 5 to 10 minutes before using it in your cocktail.
- Next, make the raspberry moscow mule. Add the raspberry simple syrup, vodka and lime juice to a copper mule mug filled with ice. Stir. Top off with the ginger beer and serve. Enjoy responsibly!
Notes
- Non-Alcoholic Version: For a raspberry mule mocktail, leave out the vodka. Make sure the ginger beer you are using is completely alcohol free. Some brands have a very small quantity of alcohol in them.
- Don’t boil the raspberry syrup. The syrup should come to a very gentle simmer. Anything more than that and it will be too thick.
- Storage: Store leftover syrup in an airtight container in the fridge for up to a week.
