Description
This refreshing raspberry mojito mocktail is a tasty non alcoholic drink. It’s easy to make with a homemade raspberry syrup made from fresh raspberries.

- Raspberry Simple Syrup:
- ½ cup raspberries
- ½ cup granulated sugar
- ½ cup water
- Raspberry Mojito Mocktail:
- 8 large mint leaves
- 1 oz raspberry simple syrup
- 1 oz lime juice, freshly squeezed
- 4 oz club soda
Instructions
- Heat the raspberries, sugar and water together on a saucepan over medium heat. Stir occasionally, smashing the raspberries to release their juices.
- Continue to heat for 5 to 10 minutes until the sugar has fully dissolved. Don’t let the syrup boil.
- Remove the syrup from the stove and pass it through a fine mesh strainer to remove the raspberry chunks. Let it cool to room temperature.
- In a highball cocktail glass, use a muddler to muddle the mint leaves, raspberry simple syrup and lime juice together. Press gently on the mint leaves.
- Add in a handful of ice and top with the club soda. Stir well and serve.
Notes
- Store leftover raspberry simple syrup in an airtight container in the fridge for up to 1 to 2 weeks.
