This creamy, vegan matcha milk tea is a delicious bubble tea recipe for anyone who loves matcha!
Ingredients

- Simple Syrup:
- 1 tbsp water
- 1 tbsp granulated sugar
- Boba:
- 2 tbsp quick cooking boba*
- Matcha Milk Tea:
- 1 tsp matcha powder
- 2 tbsp hot water
- 1 cup almond milk
- handful of ice
Instructions
- Make the simple syrup: Heat the water and granulated sugar in a small pan over medium heat. Continue to heat, stirring occasionally until the sugar has completely dissolved. This will take about 5 minutes. Remove the syrup from the pan and set aside.
- Make the boba: Bring a small pot of water to a boil over high heat. Once boiling, add in the boba pearls. Slightly reduce the heat to maintain a gentle boil. Continue to boil the boba pearls for 10 minutes. Strain them and run the boba under cold water for a minute. Then, immediately add the boba to the simple syrup mixture and stir to fully coat the boba.
- Make the matcha milk tea: Using a matcha whisk, whisk the matcha powder and hot water together until there are no lumps of matcha left. Add the matcha mixture to the boba and simple syrup. Stir together until evenly combined. Add this matcha boba mixture to the bottom of a glass filled with ice. Pour the almond milk on top, stir and serve immediately. Enjoy!
Notes
- *Use quick cooking boba. If you can’t find quick cooking boba, cook the tapioca pearls according to the instructions on the packaging.
- Mix the boba pearls into the simple syrup right away. As soon as the boba pearls are done cooking and have been rinsed with cold water, coat them in the simple syrup. This prevents them from sticking together and forming a large clump.
- Use a matcha whisk: A matcha whisk helps to easily dissolve the matcha powder in hot water. Without a whisk, it can be difficult to get rid of small clumps of matcha powder.
