Ingredients
Scale
- Basil Simple Syrup:
- ½ cup fresh basil leaves, packed
- ½ cup granulated sugar
- ½ cup water
- Cucumber Basil Gimlet:
- 2 oz cucumber juice
- 1 oz gin
- 1 oz basil simple syrup
- 1 oz lime juice, freshly squeezed
Instructions
- First, make the basil simple syrup: Heat the basil leaves, sugar and water together in a saucepan over medium heat. Continue to heat, stirring occasionally. Don’t let the syrup boil.
- After about 5 to 10 minutes, the sugar should have completely dissolved. Remove the pan from the stove and strain out the basil leaves. Let the basil syrup cool for a few minutes.
- Next, make the cucumber basil gimlet: Add the cucumber juice, gin, basil simple syrup and lime juice to a cocktail shaker filled with ice. Shake well for 20 seconds and strain into a chilled coupe glass. Serve immediately.
Notes
- Store leftover basil simple syrup in an airtight container in the fridge for up to 2 weeks. Leftovers can be used to make other basil drinks, such as this watermelon basil mocktail or this lemon basil martini.
