Description
This balsamic glazed asparagus is quick and easy to make. Roasted asparagus is drizzled with a thick, balsamic reduction for a healthy side dish.
Ingredients

- 12 asparagus spears
- 1 tbsp olive oil
- salt & pepper to taste
- ½ cup balsamic vinegar
Instructions
- Preheat the oven to 425F. Line a baking tray with aluminum foil.
- Cut off the bottom of the asparagus stalks. Coat the asparagus in the olive oil, salt and pepper. Lay the asparagus on the baking tray in a single layer. Bake for 6 to 8 minutes until tender.
- Meanwhile, heat the balsamic vinegar in a small saucepan over medium to high heat. Bring the vinegar to a low simmer, adjusting the temperature as needed. Continue to simmer the vinegar for about 5 to 10 minutes, until it has reduced to half of its original volume. It is done when it coats the back of a wooden spoon. You will end up with more balsamic vinegar than needed, use the amount desired.
- Let the balsamic reduction cool for a few minutes before pouring over the asparagus. Serve immediately.
Notes
- Storage: Store leftover roasted asparagus in an airtight container in the fridge for up to 4 days. Store leftover balsamic glaze in a separate container for up to a week.
- The glaze will thicken a lot as it cools. If it has thickened too much, reheat it on a saucepan over low heat.
