This creamy vanilla oat milk latte is easy to make at home with simple ingredients. It’s made with a homemade vanilla syrup using real vanilla beans, which give it the best vanilla flavoring.

Oat milk can be used to make so many different flavors of lattes and drinks. You can make a classic oat milk latte without any specific flavors added. Or you can use coffee syrups to make flavored lattes, such as this Starbucks brown sugar oat milk latte.

Ingredients & Substitutions

The ingredients needed to make the vanilla latte.
  • Vanilla Extract & Vanilla Bean: Vanilla extract and real vanilla beans are used to make the vanilla coffee syrup. Vanilla beans are expensive, but you only need 1 to make a large batch of syrup and it is still less expensive to make your own syrup homemade than buying one store bought.
  • Oat Milk: Lattes are made with frothed milk. Not all oat milk froths equally well. Use an oat milk that is labelled as “barista” as this type is meant to be frothed for coffee drinks.
  • Espresso: Use high quality, freshly brewed espresso. You could also use very strongly brewed coffee instead. Finally, if needed you could use instant espresso, but make sure it is a high quality one.
  • Sugar: Granulated sugar is dissolved into the vanilla syrup so that it also acts as a sweetener for the latte. This recipe would also work with brown sugar, which would give it a richer, slightly caramel flavor.
  • Water: Water is used to give the vanilla syrup the proper consistency Use filtered water to avoid any unpleasant tastes from tap water.

Equipment

Here are the things that you will need to make the vanilla latte:

  • A small saucepan to make the vanilla syrup in.
  • A fine mesh strainer to strain out any small pieces of vanilla bean from the syrup.
  • An electric milk frother to froth the oat milk.
  • A glass mason jar to store the leftover vanilla syrup in.

Step By Step Instructions

Step 1: Heat the water, sugar, vanilla extract and split vanilla bean in a saucepan over medium heat. Continue to heat, stirring occasionally until the sugar has fully dissolved.

Step 2: Remove the vanilla syrup from the stove and strain out the vanilla bean.

Step 3: Mix the espresso and vanilla syrup together. Froth the oat milk in an electric frother and pour it on top of the espresso.

Expert Tips

  • If you don’t have a frother: An electric milk frother is the best, most effective way to froth milk. However, as an alternative, you can use a mini, handheld milk frother. Or, you can warm the milk in the microwave for 30 to 40 seconds and shake it vigorously in a mason jar.
  • The vanilla syrup should be liquid. If the syrup is thick and sticky, then the syrup was probably heated for too long or at too high a temperature. To fix this, stir in a ½ tablespoon of water at a time while heating on low, until the syrup has thinned out.
  • Store leftover vanilla syrup in the fridge. This recipe will make extra vanilla syrup. Let the syrup fully cool to room temperature before storing. Store the syrup in an airtight glass container in the fridge for up to 1 to 2 weeks. Making a large batch in advance will save time making this latte on busy mornings.

Can I use vanilla extract instead of a vanilla bean to flavor the latte?

The vanilla bean is the most important ingredient to flavor the vanilla syrup. While the syrup will work without the vanilla bean, it will not taste as authentic or give as rich a vanilla flavor.

What can I use as a sweetener?

The vanilla syrup is a flavoring as well as a sweetener. To make the latte sweeter, you could add an extra ½ to 1 tablespoon of vanilla syrup, honey or maple syrup.

Do I really need an electric milk frother?

No, but it does give the best results — especially for oat milk. If you plan to make a lot of oat milk lattes, it is definitely a worthwhile investment.

Description

This creamy vanilla oat milk latte is made with homemade vanilla syrup made from real vanilla beans, which gives the BEST vanilla flavor!


Ingredients

Scale
  • Vanilla Syrup:
    • 1 cup water
    • 1 cup sugar
    • 1 tbsp vanilla extract
    • 1 whole vanilla bean, split in half
  • Vanilla Oat Milk Latte:
    • 1 ½ tbsp vanilla syrup
    • 2 oz espresso, freshly brewed
    • ½ cup oat milk

Instructions

Vanilla Syrup:

  1. Heat the water, sugar, vanilla extract and vanilla bean in a medium saucepan over medium heat. Stir occasionally. Continue to heat for about 5 to 8 minutes until the sugar has completely dissolved. Don’t let the syrup boil.
  2. Once the sugar has dissolved, remove the syrup from the stovetop and strain out the vanilla bean. You may also want to pass the syrup through a fine mesh strainer to remove any small pieces of vanilla bean. 

Vanilla Oat Milk Latte:

  1. Stir the vanilla syrup into the freshly brewed espresso until it has fully dissolved. 
  2. Froth the oat milk in an electric frother. Pour the oat milk on top of the espresso and serve immediately.

  • This recipe makes extra vanilla syrup. Store leftover syrup in an airtight glass container in the fridge for up to 1 to 2 weeks.

    I don’t like espresso, if I were to just remove that part, would it still be good or should I add something else to replace it… like more milk?

      You can leave out the espresso, it will still taste good. You don't need to replace it with more milk, but you could replace it with strong coffee, matcha tea or chai tea concentrate for variety!
