Description
This Pineapple Mezcal Cocktail is a fancy craft cocktail that has a bit of a spicy kick. Made with homemade jalapeno simple syrup, this is a cocktail that will impress your guests.

- Jalapeno Simple Syrup:
- ½ cup jalapenos, diced
- 2 tbsp brown sugar
- ¼ cup water
- Pineapple Mezcal Cocktail:
- 3 oz pineapple juice
- 2 oz mezcal
- 1 oz lemon juice, freshly squeezed
- 1 oz jalapeno simple syrup
- 2 oz ginger beer
Instructions
- Make the Jalapeno Simple Syrup. Heat the jalapenos, sugar and water in a saucepan over medium heat. Stir occasionally. Don’t let the syrup boil.
- Continue to heat for about 5 minutes until the sugar has dissolved. Remove the jalapeno chunks and let the syrup cool to room temperature.
- Make the Pineapple Mezcal Cocktail. Add the pineapple juice, mezcal, lemon juice and jalapeno simple syrup to a cocktail shaker filled with ice. Shake well for 20 to 30 seconds until the outside of the shaker is frosted.
- Strain and pour into a cocktail glass. Top with the ginger beer and serve immediately.
Notes
- Storing Jalapeno Syrup: Store leftover jalapeno syrup in an airtight jar in the fridge for up to 2 weeks.
