This Cranberry Mimosa (also called a Poinsettia Cocktail), is an easy to make Christmas brunch cocktail that is great for a crowd of people. All you need is cranberries, sugar, water and champagne (or Prosecco).

Ingredients & Substitutions

The ingredients needed to make the cranberry mimosa.
  • Cranberries: You can use either fresh or frozen cranberries to make the simple syrup.
  • Prosecco: You can use Champagne, Prosecco, Cava or sparkling wine to make these Christmas mimosas. Champagne will be much more expensive than the other options. For a mocktail, use non alcoholic sparkling wine.
  • Sugar & Water: Sugar and water are used to make the cranberry simple syrup. You can use brown sugar as a substitute, which will give the syrup a richer, slightly caramel flavor.

Step By Step Instructions

Step 1: Heat the cranberries, sugar and water together in a saucepan over medium heat. Heat for about 5 to 10 minutes, stirring frequently until the sugar has completely dissolved.

Step 2: Remove the saucepan from the stove and strain out the cranberries. Let the syrup cool to room temperature.

Step 3: Dip the rim of the champagne flutes in the cranberry syrup and gently press the edge into granulated sugar to make it stick.

Step 4: Add the cranberry syrup to the champage flute. Top with Prosecco or champagne. Gently stir before serving.

Expert Tips

  • Add festive garnish. If you are serving this cocktail at a Christmas party, try adding some festive garnish such as a sprig of rosemary or a cocktail pick with a few frosted cranberries on it.
  • Make it a mocktail. To make a mocktail version of this cranberry mimosa, use non alcoholic sparkling wine or alcohol free rosé instead of champagne.
  • Serve it in a pitcher. This Cranberry mimosa is great for a Christmas brunch cocktail. For a large batch, serve them in a Christmas themed pitcher and let guests serve themselves.
  • Don’t let the syrup boil. When you are making the cranberry syrup, make sure the syrup doesn’t boil. Otherwise, too much water can evaporated, leaving a thick sticky syrup that doesn’t dissolve well in your mimosa.
  • Burst the cranberries. When you are heating up the cranberry syrup, make sure to burst the cranberries so they release their juice. Otherwise, the syrup won’t be very flavorful.
  • Adjust the amount of cranberry syrup. Mimosas are very forgiving recipes. Adjust the amount of cranberry syrup you add based on how sweet you want your cranberry mimosa to be.

It is best to make this mimosas soon before serving them. If you let them sit for too long, the champagne will go flat.

Can I use cranberry juice instead of cranberry syrup for these mimosas?

Yes. If you prefer, you can use cranberry juice instead of cranberry syrup for this cocktail. You will need to add 2 to 3 times as much juice since the cranberry syrup is much more concentrated.

Can I use store bought cranberry syrup instead of making my own?

Yes. If you would like to save time, you can use a store bought cranberry syrup instead. However, making your own at home will always taste better.

This Cranberry Mimosa (also called a Poinsettia Cocktail), is an easy to make Christmas brunch cocktail that is great for a crowd of people.


Ingredients

  • Cranberry Simple Syrup:
    • ½ cup cranberries
    • ¼ cup granulated sugar
    • ¼ cup water
  • Cranberry Mimosa:
    • 1 to 2 oz cranberry simple syrup
    • 4 oz Prosecco or champagne

Instructions

  1. Make the cranberry syrup: Heat the cranberries, sugar and water in a small saucepan over medium heat. Continue to heat, stirring frequently, for about 5 to 10 minutes, pressing the cranberries with the back of a fork to burst them. Don’t let the syrup boil. Once the sugar has completely dissolved, removed the syrup from the stove and let it cool. 
  2. Prepare your glass: Dip the rim of your champagne flute in the cranberry syrup, and then roll it in a small amount of granulated sugar, pressing to make it stick. 
  3. Make the cranberry mimosa: Add the cranberry simple syrup to the bottom of your champagne flute. Top with the Prosecco. Stir and serve immediately.

Notes

  • Mocktail version: For a mocktail version, use non alcoholic sparkling wine or non alcoholic sparkling rosé instead of champagne.
  • Leftover syrup: Store leftover cranberry simple syrup in an airtight container in the fridge for up to 10 days. You can use leftovers to make this Cranberry Gimlet.
